Be it summer or winter, soups are always a favourite meal options in my family.This hot soup is one of the best options for a warm & cozy feel😍..
This soup is a blend of almond, broccoli & milk, with salt & pepper... One bowl of broccoli soup is really filling..

Broccoli- 1 small chopped into florets including the tender Stem part
Onion- 1 medium chopped
Garlic- finely chopped 1tbspn or more depending on personal taste
Almonds - 10 to 12
Milk/ coconut milk(for Vegan option)- 1/2 cup or little more
Salt and pepper- as per taste
Chilli flakes- optional but recommended
Soak almonds in hot water for 10 minutes. After 10 minutes, remove the skin and keep it ready.
In a pan, heat a spoon of butter, add garlic saute til they turn brown.
Now add onion and saute for few minutes. 4.Finally add Broccoli n salt and cook in a medium flame until Broccolis are done, u may add few drops of water, for fast cooking. Keep few Brocolli florets aside for final garnishing.
Let the mixture cool completely.
Now grind it to a smooth paste along with blanched almonds, add water if required, keep it ready.
Just before serving time, boil this mixture, add enough milk( I added coconut milk, as I had a half opened can) to it to adjust the soup consistency. Add salt and pepper to taste.
Serve hot, garnished with chilli flakes and roasted broccoli.
Do not add milk completely at one go, add little by little and adjust the consistency. Sometimes, you may even require little more than half cup.
Try to avoid water while cooking the Broccoli, adding water makes Brocolli to turn little bland in taste.
Though cooking broccoli with water is faster, I prefer the slow roasting method for more flavours.
