Pineapple Kesaribath

Pineapple Kesaribath is one of the most common sweet of Karnataka,served along with Khara bath(Upma) or along with a meal in marriages or festivals.

Ingredients:


Semolina/Chiroti Rava- 1 cup

Sugar- 1 cup more or less

Pineappple finely chopped- 1/4 cup to 1/2 cup

Ghee- 1/2 cup

Kesari strands- few

Salt a pinch

Water- 2 n 1/4 cup

Cardamom powder- 1/2 tsp


Garnish:

Ghee- 1 tbsp

Cashews- 10 broken into pieces

Raisins- 10(optional)


  1. Soak the Kesar strands in 2 tbsp of warm water for 20 minutes at least.

  2. Heat 1 tbsp ghee in a Kadai, once hot enough fry the cashew pieces till they turn golden brown,add raisins,quickly give a stir and take off the nuts into a bowl for later use.

  3. In the same kadai,add one more tbsp pf ghee,add the Rava and fry until roasted to a mild golden colour, in a medium flame.

  4. In the meanwhile,in another vessel take the pineapple pieces along with 2 tbsp sugar and 2 tbsp water and give a nice boil,so that the fruit is cooked and absorbs sugar and doesn't taste bland in the dessert

  5. Once the Pineapples are cooked enough,add the remaining water and allow it to boil.

  6. The Rava would be roasted well by the time water is boiled.

  7. Add the water and Pineapple mixture to the Rava in the Kadai and continue stirring,making sure there are no lumps created,close the lid and cook for 4 minutes in a medium flame or until the water evaporates.

  8. Add Sugar and 3 tbsp of Ghee and continue cooking,at this Stage the mixture would turn watery again,do not worry,the sugar will melt and get well incorporated with the Rava

  9. The Rava+Sugar mixture will start leaving the pan,now add a pinch of salt,Kesar water,Cardamom Powder, mix well.

  10. Finally add the remaining ghee,dry fruits and continue stirring for 2 more minutes.

  11. Transfer to a serving bowl,serve hot or cold.


Note:

  1. Sugar quantity can be increased or decreased as per personal liking,it also depends on the type of Rava you use.

  2. Pineapple pieces can also be used as per liking,if you like chunks in each bite,take half cup

  3. Adding a pinch of Salt enhances the taste,it should NOT be more than a pinch
